Experiences with carts

Hey all!

I am currently in the process of opening a cafe in Salt Lake City. In the meantime between our opening and now, my partner and I have decided to a cart that sells cold brew and nitro. It’ll travel between local events and will be available to hire for events as well.

If you’ve done something similar, what types of permitting were necessary for you to operate? Is it as simple as just making sure that all food handlers are up to date?

I’m aware that each county’s standards differ, but this is more a broad question. Salt Lake County in Utah seems to be vague, so please share any experiences you’ve had with carts please!
