When using a spouted portafilter, is the espresso evenly distributed if you split the shot into two demitasses? So the sugars extract first and the bitters extract last so if the espresso hits one demitasse before the other, would that make them unbalanced? Even if it goes through one hole underneath the basket before it hits the spouts?
