I’ve seen that a couple EK43 owners sand their grind chambers to help with burr alignment, is this a cool idea, or maybe we should just stick to shimming with aluminium foil?

I believe Titus Grinding does this with their custom EK43 builds.

I believe they have Spareparts for the Mahlkönig EK43 at Mokkahouse, not to sure but they do sell the EK43
